The Silverton Saga!

Well I guess things are moving along with the Reinhart starter. There was quite a collection of what I assume, after reading again, to be alcohol on top. Not the pleasant little bubbles I had hoped for. You can see what I had after I poured it off. As you can see below, there was not a tremendous pick up in volume either.
Per the formula, I halved what I had by weight. What I had left you see below. The bubbles on the right, which appeared rather quickly, restored my hope!
After feeding The Beast 2 cups of flour and 1 1/2 of water there was an almost instant bubblation situation. My heart leapt! You can see the first few bubbles below. And they continue.
This is a 14 day extravaganza. I am about 30 hours into it. Grapes have been sheathed in cheese cloth, lovingly crushed and submerged in a paper mache like combo of unbleached bread flour and water. I'm not supposed to do much for the first 48-72 hours. She did allow that I could deflate the grape sack and swish it around a little. So I did. I like to play with my food. As you can see there is a serious collection of alcohol on top. At what point should I pour it off as I did with the Reinhart starter? Anyone? Bueler?
Bubbles = Life? I think this is a good thing. The aroma is similar to the Reinhart starter, sour but neither overpowering nor entirely unpleasant.
