Longing For Loft

I am part of Peter Reinhart's army of recipe testers for his upcoming book on 100% whole grain breads. It's an invaluable learning experience, but the initial whole wheat formulas have produced predictably dense loaves. This has left me in something of a volume vacuum.

This is "Toast Bread" from Hamelman's Bread. It's suppoed to be baked in 2 pullman pans, but I needed size!
