This shaggy mess is the beginning of my first Moroccan Purim Bread. It's a challah dough with raisins and fennel seeds.
A little kneading and a little time yield a dough that is very manageable. The dough ferments for 2 hours.
It can be shaped into rounds, here before and after 90 minutes of proofing, or...
...Haman's Eyes! Haman was a bad Persian guy who tried to kill all the Jews in Persia. Thus his eyes are "X'ed" out. Once shaped (can you say "Arts & Crafts"?), he proofs for about 90 minutes. Those are hard boiled eggs that get baked right in.
The finished bread is rather dramatic.
The rounds are slightly less theatrical.
But very tasty.
