When you order from King Arthur, they kindly tell you if you can buy more things w/o incurring more shipping costs.

I went with Harvest Grains Blend. It looks like what I feed my finches; oat berries, wheat & rye flakes, sunflower, poppy, sesame & flax seed & millet

This is the recipe that came on the package; Harvest Grains Bread.

If the harvest grains weren't enough the recipe adds corn meal.

It's pretty active stuff. About an hour each of fermenting and proofing.

GIven all the "stuff" in the dough, the rise was suprising.

Even more spring in the oven.

The recipe adds the grains "raw", no soaking.

Peter Reinhart has a similar bread, but the grains get soaked. I might soak them next time 'cuz it's pretty crunchy as is.

Tasty though, and suprisingly light.
