Pita
The dough is simple enough, flour, yeast, water, salt, sugar & olive oil. It gets kneaded for 6-8 minutes, scaled and then rests for 20 minutes. After their nap, they are rolled out to 1/8". They bake 2 at a time in a very hot oven. This is the first batch. The foil provides a barrier to too much direct heat. Too much direct heat prevents them from puffing up. Very simple and very tasty.
