Summer Stuffing?
I can't help it. I love cranberries. In anything at any
time!
This version is the Cranberry-Walnut Celebration Bread from
The Bread Baker's Apprentice.
Walnuts, cranberries, bread(crumbs)? Sounds like stugging to me! This is a straight dough that swells up nicely over 2 hours. On top is pre-proof. It gets a coat of egg wash and proofs uncovered for about 90 minutes. Below is post-proof and a second eggwashing. The finished product has a really nice, deep brown color. The crumb is moist and loaded with stuff. The flavor is outrageous! This will make any turkey sandwich into Thanksgiving, even in July.
