Wheat-less Wonders
I recently met someone who is allergic to wheat. A perfect
opportunity to play with spelt for the first time! Spelt is a grain that has a
similar gluten profile to wheat. The good news is that it works for those with
wheat allergies. The bad news is that it doesn't work for people with gluten
allergies.
Since this is my first stab at spelt, I decided to keep it simple. This is 100% whole grain spelt flour. Yeast, honey,canola oil and salt round things out. It didn't exactly double in about an hour, but the recipe minutes and I didn't want to go to far. The proof time was a little longer than advertised as well. This is after about an hour. It actually looked like real bread. I'd read some pretty sad tales but this looked promising. Not half bad. The crumb was much more open than I had anticipated. I think I short armed the baking a bit and maybe jumped the gun on the cooling. The flavor is really good! This spelt stuff shows promise.
