Why Not Chocolate?
I like bread. I like chocolate. So why not chocolate bread? This is not an
original concept. People have been combining the two for ever. I didn't want
pain au chocolat. I wanted chocolate bread. Beth Hensberger had just the thing
in her Bread Bible.
Chocolate dough laced with chocolate chunks, that should do the trick. The crumb gets its chocolate from cocoa. The dough is laced with chunks of semi-sweet chocolate. I gilded the lily by adding cranberries soaked in orange juice, orange zest and toasted hazelnuts.
The book says to use two 8" spring form pans. I have 1 10" pan. WHat to do with the rest of the dough? How about mini loaves! So far so good. Because the loaf was a little larger than called for, it baked a little longer. There's sugar in the dough so I had to be careful. But it tastes like chocolate! The minis worked well too. All in all, a keeper.
